How to Make Healthy Pea Soup

Surprisingly delicious and rich in a number of health-enhancing nutrients, green pea soup is a solid choice for any health-conscious budget. This soup will provide you with plenty of natural vitamin C, healthy omega-3 fatty acids, fiber, healthy carbohydrates, and a few unique phytonutrients that provide anti-inflammatory and antioxidant effects. - Ben Kim

Ingredients you will need include:

8 cups frozen peas
5 cups vegetable or chicken broth
1 garlic clove, roughly chopped
2 tablespoons of organic butter (or olive oil for those who avoid dairy)
Sea salt and black pepper, to taste

Over medium heat, cook garlic in butter or olive oil for 2-3 minutes.

Add peas and cook for an additional 1-2 minutes.

Add vegetable or chicken broth, bring to a boil, then reduce heat to allow ingredients to simmer for 5 minutes with the lid on.

Blend all ingredients in a food processor until smooth and return to pot to heat through. Add sea salt and black pepper, to taste.

If available, garnish with a sprig of fresh mint. Enjoy this hearty pea soup. As with most soups, it goes well with a few slices of creamy avocado on the side.

This is a truly delicious soup. If you have any leftovers, I recommend trying it the next day cold from the frig. It's a great cold soup on a hot day!

Outstanding!

I really love my pea soup but I make it with split peas. Also have a soup bone in it for starters. The last half hour of simmering I add leeks and celeriac. I bet my soup tastes better!!
