Steel Cut Oats Porridge

For a substantive breakfast to fuel a busy day, I often make a batch of porridge. Though it's usually rice porridge in our home, once in a while, I'll make porridge with steel cut oats. Oats are a rich source of insoluble fiber which facilitates healthy bowel movements and reduces risk of cardiovascular disease. Have a look below for my simple approach to making a pot of steel cut oats porridge:

Makes about 2 servings

Ingredients:

1 cup quick cook steel cut oats
2 cups water
1 cup non-dairy milk
2 tablespoons organic raisins
2 tablespoons crushed almonds
1 tablespoon organic honey (optional)
1 teaspoon cinnamon
Fresh berries

Directions:

1. Add raisins to 2 cups of water and bring to a boil.

2. Add oats, bring down to a simmer, stir regularly for 2 to 3 minutes or until oats are cooked.

3. Stir in cinnamon, milk, and one tablespoon of crushed almonds. If you want a hint of sweetness, you can include a tablespoon of organic honey at this point.

4. Serve in a bowl. Top with remaining crushed almonds and berries. Sit back and enjoy this nourishing and highly satisfying bowl of steel cut oats porridge.
