Healthy French Beans Recipe

image

Note: French beans look like green beans, but skinnier.

Ingredients:

400 grams of French beans (about 3 handfuls)

Butter/Vegan Margarine/Olive Oil Mixture, enough for the French beans plus 4 Hasselback Potatoes:

5 tablespoons of melted butter or vegan margarine
1/3 cup of extra-virgin olive oil
2 tablespoons of chopped fresh thyme or 1 flat teaspoon of dried thyme
1 flat teaspoon of sea salt
Freshly cracked black pepper, to taste

Directions:

1. Preheat oven to 400 degrees F.

2. Rinse and drain French beans. Put French beans into 9" x 13" baking dish.

3. In a small bowl, mix together the melted butter or vegan margarine, oil, thyme, sea salt, and black pepper.

4. Drizzle about 3 tablespoons of the oil-butter/vegan margarine mixture over the French Beans and gently mix until all of them are coated. The rest of this mixture can be used over 4 Hasselback Potatoes.

5. Bake in the oven for 25 minutes and serve them up as a delicious side to Hasselback potatoes or anything else you please.

Notes if you make Hasselback potatoes and French beans at the same time:

1. Preheat oven to 400 degrees F.

2. Put the prepared potatoes in for 30 minutes.

3. At 30 minutes, take the potatoes out to baste them with the Oil-Butter mixture.

4. Put the potatoes back into the oven. Bake these for 30 minutes.

5. Five minutes after you put the potatoes back into the oven, put the French Beans in. The beans will bake for 25 minutes. Doing it this way, the Hasselback potatoes and French beans will be ready to come out of the oven at the same time.
