How to Add Lovely Flavour to Roasted Vegetables

To elevate roasted broccoli and cauliflower a level or two, try adding two handfuls of small tomatoes in the following fashion:

1. Preheat oven to 350 degrees Fahrenheit on bake setting.

2. Wash and gently pat dry florets of broccoli and cauliflower, and spread them in a single layer on a baking dish - a bit of overlap is fine. Drizzle with olive oil and season with sea salt and black pepper. Give the dish a gentle back and forth to further distribute olive oil and seasoning.

3. Wash and gently pat dry small tomatoes, then distribute them on and around broccoli and cauliflower florets - no need to season tomatoes or add extra oil.

4. Let everything bake at 350 degrees F for 35 minutes.

5. Once finished baking, remove dish from the oven and feel free to add a bit of seasoning to the tomatoes.

As the vegetables bake together, natural juices seep out of the tomatoes, imparting subtle notes of sweetness and umami to the broccoli and cauliflower. Enjoy this yummy dish of vegetables on its own or with other nutrient-dense choices like creamy avocado slices or a light omelette.
