Healthy Potato Pancake Recipe

If you enjoy pancakes but find that traditional flour-based varieties tend to hang around in your intestines longer than is comfortable, give this delicious recipe for healthy potato pancakes a try.

Different varieties of potato pancakes are quite popular throughout Russia and Korea. Using new potatoes instead of baking or russet potatoes can reduce the burden that is placed on your blood sugar-regulating mechanisms.

Ingredients:

4 new potatoes, peeled and quartered
1/2 cup of unsweetened rice, almond, or soy milk
1 organic egg
3 tablespoons of agave syrup or honey
3 tablespoons of brown rice flour
1/8 teaspoon sea salt
1/4 teaspoon cinnamon
4 tablespoons of olive oil or coconut oil

Directions:

Steam potatoes until tender, then mash them.

Add rice, almond, or soy milk, organic egg, agave syrup or honey, brown rice flour, sea salt, and cinnamon to mashed potatoes.

Use your hands to shape potato mixture into flat cakes.

In a medium to large-sized pan, heat olive oil or coconut oil over medium heat and saute potato cakes until they are golden brown.

Enjoy these delicious and filling healthy potato pancakes.

This looks so yummy. I'm going to try it soon! Thanks! My children love potatoes. I usually just slice the potatoes and then steam them. While still warm, they eat the potato slices with a drizzle of extra-virgin olive oil and a tiny bit of sea salt.
