How to Make Healthy Gluten-Free Cookies

For this delicious cookie recipe, you will need:

3 cups raw sunflower seeds (soaked in water overnight, drained)
10 pitted dates (soaked for 1 hour, drained)
1 cup chopped dried apricots (soaked for 1 hour, drained)
1 cup raisins (soaked for 1 hour, drained)
1 cup almond butter
1 tablespoon vanilla (optional)
1/2 teaspoon cinnamon (optional)

Blend the sunflower seeds, dates, dried apricots and raisins in food processor to a nutty consistency.

Add in the Almond Butter. You can also add in the vanilla and cinnamon at this point if you wish.

Roll into small balls and flatten out to about 1/4 inch thickness.

Tip: I found it was easier to roll into balls after refrigerating the mixture for about 30 minutes.

Cover and refrigerate for one hour before serving. Enjoy!

Please note that because this gluten-free cookie recipe calls for dried fruits, it's highly recommended that you floss and brush after eating. Nothing creates dental cavities as quickly as dried fruit that remains in contact with your choppers. - Ben Kim

First of all, these look fabulous. I love that they are made with whole fruits and nuts, and are easily made.

I've been without sugar, dairy, or gluten for about 4 or 5 years now, and I don't miss it one bit. Once I gave them up, I never craved them again. I think people get used to a certain style of eating, and they feel like they "need" the extra sugar or refined food. It's a habit. However, delicious treats can be made from wholesome ingredients. Food is so easily accessed now. You can find just about everything you want at a grocery store a few mils away. I created lots of healthy dessert recipes like brownies, high protein cookies (made with beans! You can't even tell, trust me), fruit crisps, and lots more. Someone today, in fact, wrote telling me about my "bean" cookies they made-the family couldn't tell the difference.

My family is on the the GAPS diet for gut healing--and these cookies are great for us!
Here is one easy one I have been making:
Coconut balls
3 cups raw grated coconut
1 cup dried fruit(apricots, dates, raisins etc)
2-3 T nut butter (hazelnut is great!)
1-2 vanilla
Whir in food processor until well mixed, make into ball and chill. YUM!
(Oops-forgot to floss my teeth!)
