Mackerel to Fuel High Energy Days
Typically, I aim to save my carbs for the evening, as I find that my energy is best throughout the day when I stick to mostly protein-rich foods with non-starchy vegetables.
I love mackerel for its flavor and natural sweetness. If your local grocery store doesn’t carry it, you should be able to find mackerel at a Korean food store, often filleted and salted, ready to bake or roast. We typically add a dusting of herbs on hand and bake in a casserole dish at 350 F for about 20-25 minutes.
Another simple way to prepare mackerel is to let it simmer in broth alongside any vegetables you enjoy - Koreans often add cubed Daikon radish plus GoChooJang, a red chili paste.
