Time-Saving Tip For Garlic Lovers

Before I share a time-saving tip for garlic lovers, how about a quick review of the key health-promoting properties of garlic?

  1. When uncooked and crushed or finely chopped, garlic produces a powerful antibiotic called allicin, and an anti-fungal compound called phytoncide.
  2. Garlic helps to preserve needed aortic elasticity in the elderly.
  3. Garlic can help to normalize blood lipid levels, thereby offering some protection against the development of atherosclerosis.
  4. Garlic is high in diallyl sulphide, a compound that is thought to be an anticarcinogen.

If you want to eat garlic on a regular basis but don't have time to prepare it, here's a great tip that my wife and I learned from my mom a few years ago:

Peel the cloves of a dozen or more heads of garlic, throw all of them into a food processor, and let it rip until all the cloves have been minced into desired pieces.

Freeze minced garlic in several small containers. Keep one container in the refrigerator instead of the freezer for easy access to minced garlic. When the garlic in the refrigerator dwindles, bring down another container from the freezer - be sure to allow a day or two for it to defrost.

Hi Dr. Kim!

This is an excellent tip... Let me put in my own...
Peel a whole bunch of garlic, and squeeze it with a garlic squeezer (tough job, but you only have to do this once in a while). Put the squeezed garlic in a glass container, and cover with good quality olive oil. Store in the refrigerator, and you'll have ready to use garlic for cooking and salad dressings at all times. Do not use a food processor for storing garlic this way, I tried it once, and the garlic turned a very funny colour very fast!

Another great way to store garlic ready for use is to take off outer shell of garlic and leave the cloves as is then put in preferably small glass jar with olive oil then refrigerate.

Hi DR kim,
Indeed I love to visit your blogs which are sooooo informtive
In adition to the various methods of storing garlic I would like to furthercomment to make it much easier to peal the garlis first soak it in water for about an hour i.e the garlic pods. and later when you are watching TV and get the time you could just peal or pop the garlic out quite easily.
before covering it with olive oil and storing it in the fridge It will keep for ages this way and you can always remove as much as you would need for a day in a sepeate container and keepthe remaining jar back .

I BET YOU DIDN'T KNOW ABOUT THIS..... WE GIVE MINCED GARLIC TO OUR DOG. JUST MIX INTO THEIR FOOD.WE HAVE DONE THIS WITH OUR DOGS FOR THE PAST 20 YEARS. THE BENEFIT? NO FLEAS!
