Shelby's Almond Butter Chocolate Chip Cookies

Ingredients:

1 cup of almond butter (no-stir works best)

1 organic egg

2/3 cup coconut sugar

1 teaspoon of vanilla extract

1/4 teaspoon of cinnamon (optional)

1 teaspoon of baking soda

1/2 cup of dark chocolate chips (frozen works well).

Directions:

1. Preheat oven to 350 degrees.

2. In a medium to large bowl, mix together all ingredients except the chocolate chips.

3. Once ingredients are mixed, gently fold in chocolate chips - just a few swirls and rotations of your spoon or mixing spatula will do.

4. Form dough into balls about 2 tablespoons each.

5. Space out onto baking sheets with room between each ball, and press down lightly to flatten out a tiny bit.

6. Bake 9-10 minutes.

7. Allow cookies to fully cool off, then remove them from the baking sheet with a spatula.

7 vegan substitutes for eggs. Also you can make RAW almond butter chocolate
chip type cookies using ground almonds, raw chocolate nibs and dates/raisins.
